It's good - different texture and taste than if made with pork, but reminiscent in flavor of the stuff I grew up eating in CR, IA, with the primary spice as marjoram and garlic. Thinking I'm getting it dialed in. I've looked all over for beef casings but always end up using hog casings because that's all I can find. I don't currently have Dad's recipe, but hopefully brother Bob preserved it after Dad died. Dad's people were from Saxony. I don't think his sausage called for any filler and I don't know the spice mix. I do know they used what meat and offal they didn't use elsewhere: liver, heart, kidneys, headmeat. It was a boiled sausage stuffed in the large intestine eaten cold for breakfast on Grandma's extraordinary homemade bread with a liberal smear of mustard. I made it with blacktail deer. Pretty good first attempt if I don't say so myself. Used the recipe above and another to make my "humbles jaternice". I'll make it again if i can.
