Pot O Polenta

Rich and creamy. This is a REAL breakfast. Not like the boxed counterparts that line the kitchen cabinet shelves of so many households. Take a look at what the all popular Apple Jacks are made out of: SUGAR, CORN FLOUR, WHEAT FLOUR, OAT FLOUR, SALT, MILLED CORN, DRIED APPLES, APPLE JUICE CONCENTRATE, MODIFIED CORN STARCH, CINNAMON, SODIUM ASCORBATE AND ASCORBIC ACID (VITAMIN C), YELLOW #6, NIACINAMIDE, REDUCED IRON, ZINC OXIDE, BAKING SODA, PYRIDOXINE HYDROCHLORIDE (VITAMIN B6), TURMERIC COLOR, CALCIUM PHOSPHATE, RIBOFLAVIN (VITAMIN B2), THIAMIN HYDROCHLORIDE (VITAMIN B1), RED #40, VITAMIN A PALMITATE, BLUE #1, BHT (PRESERVATIVE), FOLIC ACID, VITAMIN D AND VITAMIN B12.

Less than half are real food and the first ingredient is sugar! "How about a bowl of sugar with a side of corn chips for breakfast, honey?" And all those grains with less than a gram of fiber...hmmm, something is fishy, or should I say FAKE. So without further adieu here is the real deal.

2 cups water
2 cups milk
1 teaspoon salt
2 tablespoons real maple syrup (no Aunt Jemima)
1 cup corn grits/polenta (Sprouts bulk section)
2 bananas, sliced
6 medium strawberries sliced
1/2 cup sliced raw almonds
cinnamon
raw local honey

Bring water and milk to a boil, add syrup, salt and slowly stir in corn grits. Turn heat to low and simmer 15 minutes, stirring frequently. Serve up in bowls. Top with fruit, nuts, cinnamon and honey as needed.

  1. We had this for breakfast this morning and really enjoyed it! I used peaches instead of strawberries because I had them frozen from this summer.
    I assumed that the maple syrup went in with the boiling polenta (that is not in the directions). It came out great, and it was very satisfying. Yum!

  2. Yes, you are right with the maple syrup, I added it in the instructions. Glad you enjoyed it, most people are surprised to find that grits are tasty.

  3. Yeah, my mom is from the South. We had grits and eggs regularly, but I've never had them with a sweet twist rather than savory.
